Serves: 6

2 lbs. ground pork

3 large garlic cloves, minced

2 1/2 tsp. fresh sage leaves, finely chopped

3 green onions, chopped

1 tbsp. lemon juice

1/2 tsp. cayenne pepper

1 tsp. freshly ground pepper (or 5 clicks/turns of grinder)

1 tsp. salt

1 tbsp. raw maple syrup

3 pinches of red pepper flakes (1 pinch if you don’t like your sausage hot)

Stir together garlic, sage leaves, green onion, lemon juice, maple syrup, salt & pepper, cayenne pepper, pepper flakes in a medium-large bowl

After all of the ingredients are mixed, add sausage to bowl and stir together until combined, using two hands to mix and form into small patties

Heat a large non-stick skillet to low-medium heat and add small patties in batches

Brown each side for four minutes, combined 8 minutes total

Serve warm
